Ironman 70.3

I have finally finished my mini documentary on my training and entry into an Ironman 70.3 race.

2 years in the making, this is the most time consuming, yet rewarding thing I have probably done in life so far. Training was long, hard, and exhausting… but I am glad to have finished the race and highly recommend it to everyone. You just need to put mind over matter.

Christmas cookies by ME!

I had my Mom dig up an old recipe for cookies we used to have way back when. I have been craving them for many years now. Date filled Orange flavored half moons…


After about 4 hours in the kitchen today, I have 75 of these yummy bad boys ready to eat.

For those who love baking:


  1. 2 cups flour
  2. 3 tsp Baking powder
  3. 1/2 tsp Salt
  4. 2 Cups shortening / Margerine
  5. 1 cup sugar
  6. 1 egg
  7. 1 cup Cooked and mashed Carrots (2 cups raw chopped)
  8. 1/2 tsp Vanilla
  9. ADD another 3 cups flour after the above is mixed

Cream shortening and sugar, then add the egg.

Stir in flour, baking powder, and salt.

Mix in mashed carrots and vanilla.

Smooth this all out nicely before you add the last 3 cups flour. let sit 15 minutes.

Roll out with more flour, cut circles, add small amount of filling, and pinch edges shut.

Bake for 10-15 minutes @ 375F, cool and ice.


  1. 3 cups chopped Dates
  2. 3 Tblsp sugar
  3. 1 cup water

Boil and mix until pasty mush.

Cool and then fill.


  1. 2 Tblsp Butter / Margerine
  2. 2 Tblsp Flour
  3. 1/3 cup fresh squeezed Orange juice
  4. 1 Tsp finely grated Orange peel
  5. 3 cups Icing sugar

Melt Margerine on low, then add the flour OFF heat.

Add Orange juice and peel, cook on low temp to thicken.

Add Icing sugar, mix and top cookies.

Nice rack

My wife has been bugging me for a few years to build a spice rack for the pantry. This is due to the fact that some of our friends have a nice custom wood spice rack hanging on their pantry door. So I finally managed to find some time to build her one.

Its a perfect fit as the door swings into place. I have about 1/8 inch clearance all around. Couldn’t have planned it better. I’m pretty happy with the result, although I am a little worried about the strength. Its mostly held together with glue…only time will tell.
